I introduced you to the Old Sugar Mill in Waialua yesterday and today I'm showing you the second part of our tour. The first part included lots of coffee and this part includes lots of chocolate! Well, kinda... We actually spent a lot of time with cocoa beans and learned about the process of making chocolate.  We were lucky enough to our own little tour guide (he was actually a creepy local guy and I'm not even sure that he worked there, but whatever) who showed us the ins and outs of the chocolate mill. He had a strong local accent and was a bit difficult to understand. At one point he handed us something that looked like a big fruit. I couldn't really understand what he said that it was but we tasted it anyway (totally safe, right?). I didn't really know what to expect, hence the awkward face that I'm making in the picture above. I researched later and found out that it was a cocoa plant! I guess that should have been obvious...

I'm not sure if it's a cultural thing or if it's just due to the fact that owning a piece of real estate for your business (or home or anything else) is outrageously priced. I've eaten out of food trucks before. But I've never seen as many as I have here. And I've never seen any truck as popular as Giovanni's Shrimp Truck . You've heard of food festivals but I bet you haven't heard of, or even imagined, that there is a festival dedicated to Spam. Yes, Spam.  The Spam Jam Hawaii website states:  "Introduced in 1937 by Hormel foods, more Spam is consumed per person in Hawaii than in any other state in the United States. Almost 7 million cans of Spam are eaten every year in Hawaii." Bottom line - these people love there Spam, y'all.  Think Chili Fest in College Station, Rodeo Cook Off in Houston, Louisiana's Crawfish Festival, etc. Spam Jam is a big food festival that revolves around Hawaii's cultural tradition of adding Spam to their menus. Local food vendors set up shop and serve their signature dishes with a twist - they add Spam, of course. You'll find things like Spam burgers, Spam fried rice, Spam tacos, Spam popsicles... just to name a few. People even dress up as Spam!
